Eat Your Veggies...

...with caramel on top ( :

A new recipe for serving veggies to my not-so-unsuspecting boys. They did like it though.

The big challenge for me in the fall & winter is buying and fixing in-season produce, especially veggies. Any suggestions? Even if you don't need another recipe, i'd love to hear some ideas. (I can't do citrus or cranberries)

 
Sweet Potato Butternut Squash Pie
3 c. mashed sweet potato
2 c. cooked butternut squash (about 1 med or smaller squash)
4 eggs
1/2 c. sweetened condensed milk
1 t cinnamon
1/2 t gr. nutmeg
1/2 t allspice
1 9in pie crust (unbaked)
1 (10oz)pckg mini marshmallows

Preheat oven to 350. Can use a blender/food processor/mixer to mash together sweet potatoes & squash, then fold in eggs, milk, & spices. Pour the mixture into the pie crust. Bake for 30min, then arrange marshmallows on top (I used large ones & didn't use all 10oz). Bake til done, about another 30min. It's done when you can poke a knife into the pie & it comes out clean. 

Trent sprinkled cinnamon sugar on his, and melted caramel drizzled over would have been good as well. The condensed milk is not so healthy, but still not a bad way to eat your veggies.
